What can I say about my mother? There are so many wonderful things I remember about her. Most of all I remember her infectious giggle. Whenever she started off on one of her giggling fits you just had to laugh with her. She was such a bubbly friendly woman. The kind who could strike up a conversation with a stranger. She never had a bad word to say about anyone and she never wasted her time with gossip. I always think about her around Christmas time. She made the best mince pies and jam tarts. I've never found any mince pies sold anywhere that came close to hers. I just wish I'd gotten her to show me her recipe. But I thought I had longer time with her. Mum, I will never ever forget you. You brought me up right. You taught me right from wrong and I owe who I am today to you. Gone but NEVER forgotten.
